Having lived with multiple anaphylactic food allergies my whole life, I totally dismissed the possibility of working in a kitchen or a bakery… even though I would honestly love nothing more (still to this day!). So when I had the idea of starting my own micro bakery at home in the pandemic, it was not only practical, but also meant I had the ultimate freedom to pursue my passion within the safety of my own kitchen…
I’m not sure if you know but when you live with chronic food allergies, especially to dairy products, even if you are in the same environment and not ingesting or touching the food, that often elicits an airborne reaction because the protein in the milk particles is aerosolised during processes like melting, heating, baking, cooking. So for me personally, even sitting in a poorly ventilated cafe where they are steaming milk, is enough to kick off a reaction… I find it very hard to breathe, I am very wheezy, my heart races like crazy and it often takes quite some time to calm my body after this exposure.
