one pan buckwheat granola
Now that I am living in a teeny tiny flat in London, I am oven-less and definitely in my one pan era... this is a gorgeous, simple stovetop granola you can whip up in minutes for your breakfast or pud
a perfect, super simple, springtime breakfast recipe!
this serves 3-4 and works really well on soya/ coconut yoghurt with some fresh or frozen berries!
Ingredients:
200g roasted buckwheat (you can substitute for rolled oats if you fancy but the buckwheat gives a lovely crunch!)
60g seeds of choice (I used linseeds here but any crunchy seeds will do)
2 teaspoons of light ground cinnamon
a pinch of sea salt
1 teaspoon of vanilla extract
30g of maple syrup/ sweetener of choice
45g of coconut oil
Method
In a large non stick frying pan or cast iron pan, toast your buckwheat and sea salt for about 1 minute on a medium heat.
Then add in the coconut oil, maple syrup, vanilla extract and cinnamon on a low heat.
Stir constantly until fully combined and golden brown; this takes only about 4-5 minutes. Ideally, let it cool but it’s not the end of the world if you can’t wait!
Serve with a generous helping of soya/ coconut yoghurt and berries. Don’t forget to tag me at @lilys_loaf on Instagram if you make it!
