summer berry breakfast crumble
My favourite part of a crumble is all of the textures, and the bit between the crunchy top that goes stringy and is even better cold the next day.
I think apple crumble was probably one of the first things I learned to bake with my Grannie and my little sister when I was a child. We used the ratio of “half as much sugar to fat, half as much fat to flour” and we used to balance our ingredients on one side of Grannie’s old fashioned scales, with the weights on the other. I always used to “test” to see if the topping was good by tasting it raw, and, if it squished together enough in my hands and held itself well, I knew it would be a good one… bonkers, I know but I swear it works! I also used to add a dash of water to the topping to create bigger clumps and that works well too. Now that we have all of the beautiful summer berries available, I wanted to make a (somewhat hearty!) breakfast crumble, that is a slight deviation from the one we used to make during my childhood. I can happily bake this in my airfryer in my little flat and enjoy with some soya yoghurt for breakfast.
Ingredients
serves 1 and fits in this ramekin
crumble topping
15g rolled oats
15g plain flour/ GF plain flour
15g honey/ maple syrup
15g coconut oil/ dairy free butter
a pinch of salt
Berries
a large handful of strawberries chopped in half/ raspberries/ blackberries
1 tablespoon of chia seeds & 1 tablespoon of water
1 teaspoon of vanilla extract
Method
First combine all of your crumble topping ingredients in a bowl and rub together until you have a lumpy mixture.
Then in a separate bowl, mix together your berries of choice with the chia seeds and water and vanilla extract. Let this sit together until a gel forms.
Then pop the berry compote into your ramekin dish and sprinkle the crumble topping on top.
Bake at 180c for 20-25 minutes in your oven or airfryer until golden brown.
Let it cool and serve with a generous helping of soya yoghurt/ yoghurt of choice!
